February Week 3 Meal Plan : Mix it Up!

We are having an exceptionally sunny February in San Francisco this year. Days are getting longer and I am holding strong to my five times a week gym regimen! For this week, I curated an eclectic mix of recipes with the intention of bringing more flavor, heat and color to February.

LUNCHES

I dialed back on the jar salads this week with only one option that is ultra layered and packed with flavor and texture.

Option A : Greek Quinoa Salad

From bottom to top of jar: oregano lemon dressing, chickpeas, artichoke hearts, roasted red bell peppers, quinoa, cucumber, olives, sun dried tomatoes, feta, basil and salad greens. Link to recipe: https://littlespicejar.com/greek-quinoa-salad-jars-meal-prep/

Option B : Sesame Noodle Bowls

DINNERS

Option A : Cheesy Baked Pasta With Sausage and Ricotta

I am a huge fan of Melissa Clark and her cookbook Dinner Changing the Game. This week in the New York Times she came out with a new one pot dinner wonder: Cheesy Baked Pasta With Sausage and Ricotta. Option B : Sheet-Pan Gochujang Chicken and Roasted Vegetables

Gochujang was a bit of a stretch to find for my Instacart shopper but it really comes through in this delicious sheet pan dinner. Don’t skip the radishes, they are an amazing finishing touch.
