I will be working from home through the end of March and decided that to make it as enjoyable as possible I would adhere to my meal planning ritual : working remotely is no excuse to only feed yourself carrots and hummus out of the tub while wearing sweatpants. And to find some peace in these chaotic times I will find new short term goals tied to social distancing like reading more and dusting off my Rosetta Stone and learn some Italian. Andiamo!
LUNCHES
Option A: Quinoa Bowl with Kung Pao Edamame

This is super flavorful but lacked some protein so I added some chicken. Delicious eaten hot or cold. Link to recipe: https://www.thekitchn.com/recipe-quinoa-bowl-with-kung-pao-edamame-227120
Option B: Spicy Coconut Grilled Chicken Thighs with Rice and Asparagus

Grocery shopping can be a challenge right now so I substituted the thighs with tenders. I made this in the past and love how it packs heat and makes for a very flavorful and moist chicken. Link to recipe: https://www.bonappetit.com/recipe/spicy-coconut-grilled-chicken-thighs
DINNERS
Option A: Slow Cooker Chipotle-Honey Chicken Tacos

I trekked to Whole Foods to get the chile in adobo and it was one of the rare condiments that was not sold out. I will take this as a good omen this recipe will be comforting and fun to eat on weeknights. Link to recipe: https://cooking.nytimes.com/recipes/1019693-slow-cooker-chipotle-honey-chicken-tacos
Option B: Takeout Style Sesame Noodles
These come together with no effort and are so comforting. Make sure to thinly slice the cucumber on top, it makes a world of difference. Link to recipe: https://cooking.nytimes.com/recipes/9558-takeout-style-sesame-noodles
ON THE BAKING RACK
Apple Kuchen Cake

I am in love with this recipe. The cake is not too sweet nor to fat (Hello Applesauce) and it pairs perfectly with a nice cup of tea in your work from home afternoon. Give it a try! Link to recipe: https://www.ricardocuisine.com/en/recipes/5926-apple-kuchen-cake
