February Week 1 Meal Plan : New Month, New Intentions.

Farewell January! February is here and I am ready for it: new month, new intentions. I like to kick off a new month by making a list of short term goals I want to achieve. It helps me get the most out of each day and gives me a renewed sense of purpose. For this month, I am aiming to close my Apple Watch rings everyday, cycle over 50 miles in 4 spin classes and reducing screen time on my phone. Let’s get to it but first, let’s meal plan!

LUNCHES

Option A : Barley Chicken Salad on Baby Spinach

This recipe is meant to be eaten in lettuce wrap which can be challenging to execute when eating at work so I will serve it on top of baby spinach.

Option B: Lentil and Red Bell Pepper Soup

Go forth ant double the spices quantities if you want a bit more heat. I ended up pureeing the soup with an immersion blender for a smoother finish. DINNERS

Option A: Cashew Chicken with Brown Basmati Rice

Option B: Slow Cooker Bolognese Sauce

ON THE BAKING RACK

King Arthur Flour has this simple focaccia recipe that is basically foolproof. Instead of herbs, I sprinkled a hefty amount of Everything Bagel seasoning on top. This will be delicious with soup for lunch. Link to recipe: https://www.kingarthurflour.com/recipes/blitz-bread-no-fuss-focaccia-recipe
