Effortlessly Healthy Muffins

This recipe is the epitome of effortless baking. One bowl and a couple measuring tools are all what you need. It’s inspired by a cookbook from Quebec teaching busy parents how to plan ahead for healthy and cost effective meals. I would loosely translate it to “Savvy Families – Busy Parents”.

SERVING SIZE

12 Muffins

INGREDIENTS

1 egg

1 cup of all bran cereals

1 cup of milk

1/2 cup of plain yogurt

3/4 cup of brown sugar

1/4 cup of vegetable oil

2 teaspoons of vanilla extract

1 1/2 cup of whole wheat flour

2 teaspoons of cinnamon

2 teaspoons of baking powder

Frozen fruits

Dried Fruits

Toasted Coconut

Toasted nuts

Chocolate chips

PREPARATION

Preheat oven to 350F. Line muffins pan with paper cups.

In a large bowl, whisk the egg with a fork. Add cereals, yogurt, milk, brown sugar, oil and vanilla. Mix.
