Zucchini, Quinoa and Prosciutto Croquettes

This is recipe from Genevieve O’Gleman felt a little bland so I made a few adjustments to bolster flavors and texture. These croquettes reheat beautifully in oven and are the perfect companion to a simple green salad.

SERVING SIZE

Serves 6

INGREDIENTS

1 zucchini

1 cup of grated mozzarella cheese

4 oz of prosciutto

1/2 cup of fresh basil

1 cup of cooked quinoa

1/4 cup of whole wheat flour

1 egg

Fresh ground pepper

PREPARATION

Preheat the oven to 450F and line a baking sheet with parchment paper.

Grate the zucchini and chop the prosciutto and basil.

In a large bowl combine all the ingredients and generously season with fresh ground pepper.

Using your hands, form 8 patties while firmly pressing the mixture.

Place on the baking sheet and cook in middle of oven for approximately 15 minutes or until the patties are golden.
